crushed grain, 0.5 lb acid malt in mash and 1.5lb stirred in after 60 min. 10:00pm Friday Heated 5 gal of water to 180 to preheat mash tun. Added grain at 158F. Mash temp settled at 151, will mash for 60 min. After 60 min stir in rest of acid malt and wrap in blanket to allow temp to drop to 100 overnight. 8:00am Saturday Beer at 121F 2:15pm Saturday beer at 112F. Added handfull of pils, stirred, purged with co2 and placed plastic wrap on top of mash. 1:00pm Sunday Noticably tart, bubbles forming under plastic wrap. starting to heat sparge water. 10.2 gal sparge water preboil volume 13.5gal at 1.030 post boil volume 10.5 gal @ 1.038. 5 gallons in each fermenter.
